Uncle Sam derives from the name of a New York meat packer, Samuel Wilson, who supplied the U.S. Army with barrels of beef during the War of 1812, but was not officially employed by the federal government. He was known around town as “Uncle Sam.” He labeled the barrels of meat with “U.S.,” and the soldiers assumed that it stood for the meat packer's own name, when in fact, it stood for “United States of America.” Read more.
